Recipe & Instructions
Ingredients
4 medium zucchinis, spiralized into noodles
1 tbsp olive oil
1/2 onion, finely chopped
2 garlic cloves, minced
400g lean ground beef
1 can (400g) crushed tomatoes
2 tbsp tomato paste
1 tsp dried oregano
1 tsp dried basil
Salt and pepper, to taste
Fresh basil leaves, to garnish (optional)
Grated Parmesan cheese, to serve (optional)
Instructions
Prepare the Zoodles: Spiralize the zucchinis into noodles and set aside.
Cook the Bolognese Sauce:
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.
Add minced garlic and cook for another minute until fragrant.
Add ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5 minutes.
Stir in the crushed tomatoes, tomato paste, oregano, and basil. Season with salt and pepper. Simmer on low for 10-15 minutes until the sauce thickens and flavors blend.
Cook the Zoodles:
In a separate skillet, lightly sauté the zucchini noodles for 2-3 minutes, just until they soften slightly. Be careful not to overcook, as they can get watery.
Serve:
Plate the zoodles and spoon the bolognese sauce on top. Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
