  • 2 tbsp tomato paste

  • Grated Parmesan cheese, to serve (optional)


Instructions

  1. Prepare the Zoodles: Spiralize the zucchinis into noodles and set aside.

  2. Cook the Bolognese Sauce:

    • Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes.

    • Add minced garlic and cook for another minute until fragrant.

    • Add ground beef to the skillet, breaking it up with a spoon. Cook until browned, about 5 minutes.

    • Stir in the crushed tomatoes, tomato paste, oregano, and basil. Season with salt and pepper. Simmer on low for 10-15 minutes until the sauce thickens and flavors blend.

  3. Cook the Zoodles:

    • In a separate skillet, lightly sauté the zucchini noodles for 2-3 minutes, just until they soften slightly. Be careful not to overcook, as they can get watery.

  4. Serve:

    • Plate the zoodles and spoon the bolognese sauce on top. Garnish with fresh basil leaves and a sprinkle of grated Parmesan cheese if desired.
