RECIPE: Seed Cycling Seed Bar Snack

If you're looking for a snack that's both delicious and packed with nutrients, look no further than these homemade seed bars! Whether you're running errands, prepping for a workout, or need something to munch on between meals, these bars are the perfect solution.

Packed with healthy fats, protein, and fiber, they're the ultimate grab-and-go snack to keep you energized and feeling full.

What I love about these bars (besides how yummy they are) is how customizable they can be. You can add your favorite seeds, nuts, or dried fruit, making it easy to adjust the recipe to your taste preferences or dietary needs. Plus, you can make a big batch, keep them in your fridge, and have them ready whenever hunger strikes.

Why You’ll Love These Seed Bars:

  • Protein-Packed: Each bar delivers a solid amount of protein to keep your muscles fueled and your energy steady.

  • Healthy Fats: Thanks to the variety of seeds, these bars are rich in healthy fats that support brain function, hormone balance, and overall health.

  • High in Fiber: The seeds and oats provide plenty of fiber to keep your digestive system happy and promote a feeling of fullness.

  • Naturally Sweetened: No refined sugars here—just natural sweetness from honey or maple syrup to satisfy your sweet tooth.

Ingredients:

  • 1 cup rolled oats (gluten-free if needed)

  • 1/2 cup sunflower seeds

  • 1/2 cup pumpkin seeds

  • 1/4 cup chia seeds

  • 1/4 cup flaxseeds

  • 1/4 cup almonds (chopped)

  • 1/4 cup dried cranberries or raisins (optional)

  • 1/4 cup almond butter (or any nut butter of your choice)

  • 1/4 cup honey or maple syrup

  • 1 teaspoon vanilla extract

  • A pinch of sea salt

Instructions:

  1. Preheat Your Oven: Set your oven to 180°C (350°F) and line a baking dish (about 8x8 inches) with parchment paper for easy removal of the bars.

  2. Combine the Dry Ingredients: In a large mixing bowl, add the oats, sunflower seeds, pumpkin seeds, chia seeds, flaxseeds, chopped almonds, and dried cranberries or raisins (if using). Stir them together to combine.

  3. Prepare the Wet Ingredients: In a separate bowl, warm the almond butter and honey (or maple syrup) together in the microwave for about 20-30 seconds, or until the almond butter is soft and melted. Add the vanilla extract and a pinch of sea salt, and mix well.

  4. Mix It All Together: Pour the wet mixture over the dry ingredients and stir until everything is evenly coated. You want to make sure the oats and seeds are all fully covered in the almond butter and honey mixture.

  5. Press into the Pan: Transfer the mixture to your prepared baking dish and press it down firmly using a spatula or the back of a spoon. The more compact the mixture, the better your bars will hold together once they cool.

  6. Bake: Pop the pan into the oven and bake for 15-20 minutes, or until the edges are golden brown. Keep an eye on them as baking times may vary based on your oven.

  7. Cool and Slice: Once baked, remove from the oven and allow the bars to cool completely in the pan before cutting them into squares or rectangles. This is super important—cutting them while still warm can cause them to fall apart.

  8. Store: Store your seed bars in an airtight container at room temperature for up to a week, or in the fridge for a longer shelf life. They also freeze well, so feel free to make a double batch and stash some away for later!

Pro Tips:

  • Mix Up the Seeds: Feel free to swap out some seeds for others, like sesame, hemp, or chia. Each type of seed offers different health benefits, so mix it up to keep your bars interesting!

  • Add Chocolate: If you want a little indulgence, stir in some dark chocolate chips or cacao nibs. They'll add a little extra sweetness and antioxidants.

  • Go Nut-Free: If you're allergic to nuts, swap the almond butter for sunflower seed butter, and leave out the chopped almonds. Sunflower seeds are an excellent nut-free alternative.

Why These Seed Bars Are a Game-Changer:

These seed bars are perfect for anyone who needs a quick, healthy snack that won't leave you feeling sluggish or guilty. They're packed with the kind of fuel your body needs to keep going strong throughout the day, without the crash that comes from sugary or overly processed snacks. Plus, with the endless customization options, you can make these bars your own and tailor them to suit your personal preferences or dietary needs.

So next time you're craving something crunchy, sweet, and satisfying, try whipping up a batch of these seed bars. They're easy to make, super nutritious, and will quickly become a staple in your snack routine!
