Recipe:
6-8 Large Tomatoes (Any Variant)
A punnet of baby tomatoes (Any Variant)
1 onion
1 large pepper OR 2/3 of any other variant
1 head of Garlic (optional)
2 tbsp Olive or Coconut Oil
Salt and Pepper
Veggie Sprinkle (Optional) OR Pepper Flakes, Cayenne Pepper (Your Choice)
Fresh Herbs (We recommend Thyme and Basil)
Instructions:
Chop up all your veggies into manageable chunks, however you like to.
Add your chopped veggies to a baking dish with your head of garlic. (Chop the top off your garlic head)
Drizzle your oil over your veggies and sprinkle your seasoning.
Add your fresh herbs to the mix as well.
Cook for about 60-80 mins at 180 degrees or until browned and soft.
Chuck in a blender with some more fresh basil, squeeze the garlic out the bulbs and blend to the desired consistency. Top Tip - Wait until your veggies have cooled a bit before blending to avoid build up in your blender.
Separate into containers and freeze if you like or serve as is.
Add yogurt or cream to the soup for a creamier consistency if you like. We like to serve with a protein and fat source like chicken schnitzel and yogurt for a easy and quick balanced meal.
