Recipe:
1 tbsp coconut oil
200g mushrooms
100g tempeh / chickpeas
200g steamed quinoa
2 handfuls baby spinach
Lemony Tahini Dressing Opt for avo and eggs to boost the protein in this dish.
Directions:
Heat the oil in a frying pan over medium to high heat. Add in mushrooms and saute for 5 minutes.
Meanwhile place the tempeh or chickpeas under a ho9t grill and grill for 2-3 mins
Combine the quinoa, tempeh/chickpeas, sauteed mushrooms, and spinach in a bowl. Serve with dressing.
Dressing
Wisk together the following ingredients in a bowl;
2tbsp Miso paste | 1tbsp Dijon Mustard | 125ml white balsamic vinegar | 3 tbsp sesame oil | 1 tsp grated ginger | 1tbsp Honey | 1 tsp tamari | 1 tsp sesame seeds | 1-2 tbsp water
