Ingredients:
1 cup quinoa
2 cups water
1 lb chicken breast, cooked and diced
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup fresh parsley, chopped

Juice of 2 lemons
