  • 2 small cauliflowers, cut into 4 thick (1.5 cm) steaks

  • Salt and pepper, to taste

  • 2 chicken breasts, halved horizontally

  • 2 tbsp harissa paste

  • Zest and juice of 1 lime

  • Fresh mint sprigs, for garnish

  • Lime wedges, for serving


Instructions

  1. Prepare the Cauliflower Steaks:

    • Preheat your oven to 400°F (200°C).

    • Arrange the cauliflower steaks on a baking sheet, drizzle with 1 tbsp of olive oil, and sprinkle with crushed fennel seeds, salt, and pepper.

    • Roast for 20-25 minutes, flipping halfway, until golden and tender.

  2. Marinate the Chicken:

    • In a small bowl, mix the harissa paste, lime zest, lime juice, and remaining 1 tbsp of olive oil.

    • Coat the chicken breasts in the harissa mixture and let them marinate for at least 10 minutes. (Longer for more flavor if you have time!)

  3. Cook the Chicken:

    • In a large skillet over medium-high heat, add a drizzle of olive oil.

    • Add the chicken breasts and cook for 4-5 minutes on each side, or until cooked through and nicely caramelized.

  4. Serve:

    • Plate the roasted cauliflower steaks and top with harissa chicken.

    • Garnish with fresh mint sprigs and serve with lime wedges on the side for an extra burst of citrus.
