  • 1 tbsp white miso paste

  • 1 tbsp rice vinegar

  • 1 tbsp olive oil

  • 1 tsp sesame oil

  • 1 tsp honey or maple syrup

  • 1 tsp water (or as needed for consistency)


Instructions

  1. Prepare the Kale: Heat olive oil in a skillet over medium heat. Add garlic and sauté until fragrant. Toss in the chopped kale and cook for about 2-3 minutes until it just begins to wilt. Set aside.

  2. Make the Miso Dressing: In a small bowl, whisk together the miso paste, rice vinegar, olive oil, sesame oil, and honey or maple syrup until smooth. Add water as needed to reach your desired consistency.

  3. Assemble the Bowl: Add the rice to your bowl as a base. Top with the sautéed kale, smoked trout, and avocado slices. Sprinkle toasted sesame seeds over the top.
