Recipe: Apple Crumble Pancakes

Ingredients:

- 4 tbsp coconut flour

- 1/2 tsp baking powder

- 1 tsp cinnamon

- Pinch of nutmeg

- Pinch of Celtic salt

- 2 eggs, beaten

- 75ml coconut milk

- 1/2 tsp vanilla extract

- 1-2 tbsp raw honey

- 1 tsp coconut oil

Topping:

- 1 tsp coconut oil

- 1/2 green apple, thinly sliced

- Handful of walnuts, chopped

- Pinch of cinnamon & ginger

- Maple syrup for drizzling


Instructions:

1. In a mixing bowl, combine coconut flour, baking powder, cinnamon, nutmeg, and Celtic salt.

2. In another bowl, whisk together beaten eggs, coconut milk, vanilla extract, and raw honey.

3. Gradually add the wet ingredients to the dry ingredients, stirring until well combined.

4. Heat coconut oil in a skillet over medium heat. Pour 1/4 cup of the batter onto the skillet to form pancakes.

5. Cook until bubbles form on the surface, then flip and cook until golden brown on both sides.

For the Topping:

6. In a separate pan, heat coconut oil over medium heat. Add sliced green apples and cook until softened.

7. Add chopped walnuts, cinnamon, and ginger to the pan with the apples, and cook for another minute.

8. Serve the pancakes topped with the apple-walnut mixture and a drizzle of maple syrup.
