- 2 large courgettes (zucchini)
- 1 cup sliced mushrooms
- 1 cup raw cashews (soaked for at least 2 hours) OR 1 Can coconut cream
- 1 cup water (Omit if using coconut cream)
- 2 cloves garlic
- 1 tablespoon nutritional yeast
- 1 tablespoon olive oil
- 1 teaspoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Recipe Instructions
1. Begin by preparing the cashew Alfredo sauce. Drain the soaked cashews and place them in a blender with water, garlic, nutritional yeast, lemon juice, salt, and pepper. Blend until smooth and creamy. Set aside.
